Something Delicious ... seems to make my mouth water when I just think of that particular food, whether appitizer, main course or dessert (double "S" for double good). Organic and fresh is the best way to go using coconut or olive oil to keep from sticking to pans or dishes.  If necessary you can substitute the recipies to be gluten, soy, dairy and nut free or whatever you need to take out or put in.

Personal favorite for breakfast:  for 1 person
Need fork, paring knife, kitchen scissors, spatula, coffee cup or wide mouth juice glass, 8-9" oven dish (no metal), 2 pot holders and preheat oven at 425 degrees F. 

1 range free egg,
2 tablespoons of cool water or favorite milk (soy, coconut, rice, etc.),
1/4 cup spinach ( fresh or thawed from frozen) or other favorite vegetable,
1 small garlic clove sliced thin or diced,
2 or 3 sprigs of fresh chives or 1/2 - 1 teaspoon of any type of your favorite onion,
1-2 tablespoons of crumbled Feta cheese (plain or seasoned) or favorite cheese 
      like a 1/2 to whole stick of string cheese is great too,
3-4 sliced cherry tomatoes, regular and sliced or diced, or sundried tomatoes,
1 small jalapeno pepper (2-3" long) with seeds cleaned out (wash hands afterwards), 
   sweeter when green & hotter when they turn red
1 teaspoon of coconut or olive oil.
... plus
1/2-3/4 cup of favorite sliced and diced fruit
your favorite cup of coffee or mint green tea or Yerba mate tea

       Crack egg open and place in glass or coffee cup with the water and disgard shell, unless you use it in the garden or for an art project.  Wisk egg mixture with fork until combined.  Pour oil in oven dish and spread on bottom and sides (up about 1" high).  Layer spinach (veggie), sliced garlic and cherry tomatoes or snip with scissors the sun dried tomatoes. Take the scissors and cut off a long slice of jalapeno pepper from its side, then cross cut thin snippets from the long slice and spread all around from center out, of veggie mix. Place the rest of the pepper in a baggie and freeze for future use. Again, wash your hands real good right after handling peppers and careful not to rub your eyes. Sprinkle cheese and snip chives with scissors over the veggie mix before or after you slowly pour the egg mixture over the veggie mix.  Either way works.  Adding salt and pepper to taste before or after egg is cooked is optional.  The feta cheese is salty already.  Place in the oven for about 10 minutes.  Take out and check if it needs poking to release uncooked egg, then 2-3 minutes more to completely cook the egg mixture.
It should slide right out onto a plate with a little coaxing from your fork or a spatula.

Enjoy with your fresh fruit cup and your tea or coffee.  Scrumptious!
